Team Building Cooking Classes – La Cucina Caldesi

In 2005 Katie and Giancarlo opened La Cucina Caldesi Ltd, a cookery school where the couple and guest chefs could share the secrets of their trade.

Within 6 weeks, in the summer of 2005, the couple got married, opened their Tuscan cookery school (2005 – 2009), opened the London cookery school and wrote their second cookbook.  A documentary maker, Adam Alexander, thought it so mad he made a television series entitled “Return to Tuscany” which was aired on BBC2 in autumn 2006 which accompanied the book of the same name.  After the series Katie and Giancarlo have become regulars on Market Kitchen, BBC Masterchef, BBC Breakfast and more recently Saturday Kitchen.

Caldesi in Campagna opened in Bray, Berkshire in 2007.  Giancarlo is behind the stoves on a regular basis where the emphasis is on seasonal Italian food using local produce.  Katie published the Italian Cookery Course in 2009 which has since been shortlisted for the Andre Simon Awards and the Guild of Food Writers Cookery Book of the Year award.  In June 2010 Giancarlo was presented with the Cavaliere del Lavoro in by the Italian government for his lifetime work representing Italy abroad.

Pizza Making – 2 hours

Price per person: £39+VAT

Minimum  number of people required to guarantee this price: 20 people

On this comprehensive short hands-on pizza courses learn how to make the perfect pizza from dough to design (please note that there will only be a demonstration on how to make the pizza dough).

After the demo everyone will get their own dough ball and create their own pizza using an array of fresh ingredients to then enjoy as a light lunch.  This is a quick, fun and informative course, a great way to spend the evening with colleagues and friends.

 

Italian Street Food – 2 hours

Price per person: £39+VAT

Minimum number of people required to guarantee this price: 20 people

Every Italian region has its own street food specialities, the common link is they are freshly cooked, quick & tasty, giving a new meaning to ‘fast food’.

This hands-on course introduces you to a variety of ‘moreish’ dishes from across Italy and as it’s a short course you’ll be cooking for an intense burst before sitting down to enjoy the fruits of your labours (selection of 4 dishes).

This cookery course will leave you thinking you are in your own little corner of Italy.

 

Demo classes – 2.5 hours  

Price per person: £55+VAT

Minimum number of people required to guarantee this price: 20 people

Watch one of their talented chefs prepare a selection of 3 dishes including starter, main course with side dish and a simple dessert.

This course is designed to increase your repertoire of recipes and inspire your home cooking. Enjoy tasters of the food during the course.

 

Italian Antipasti – 3 hours

Price per person: £67+VAT

Minimum number of people required to guarantee this price: 12 people

Antipasti, the foods offered before the meal itself begins, are a colourful, delicious way to set the stage for the coming feast and to invite your friends and family to the table. With a role in home entertaining and the dining scene, antipasti has become a full-blown social event.

On this fabulous cookery course we will introduce you to a selection of 5 Antipasti dishes from different regions of Italy which you will enjoy, at the end of the cooking session, Mezze style.

 

Introduction to Fresh Pasta – 4 hours

Price per person: £89+VAT

Minimum number of people required to guarantee this price: 12 people

They say that life is too short to make fresh pasta but actually once you’ve mastered the art of making the silky, sheeny slithers of succulence it’s unlikely you’ll look back.

This step-by-step class is aimed at keen cooks who have a passion for Italian food and are keen to learn how to make a range of authentic regional fresh pasta.

You’ll learn how to roll and cut your own long pasta such as tagliatelle, and how to stuff ravioli.

To compliment your new skills we will also demonstrate how to recreate pasta sauces at home along with a nice Italian dessert.

After all the cooking is done you will sit down and enjoy all the dishes prepared (this will consist of 3 pasta dishes and 1 dessert).
